Healthy(ish) Peanut Butter Banana Chocolate Chip Muffins!

So…it’s February…and this is my first blog post of the year! Oops! 2021 has started great for my family! Life after the holidays returned to normal…homeschooling with Abeka…lots of snow and ice…going to Disney World (thanks Grandma!) and the busiest time of year in my business (I’m a personalized nutrition coach! It’s so fun!!!)

Back to the reason you’re reading this…the muffins!
Grace and I have been working on this recipe for a while and we are so excited to share it with you!
Healthy(ish) Peanut Butter Banana Chocolate Chip Muffins
Dry Ingredients:
- 3 cups oats (blend them in a blender to create a fine oat flour!)
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 teaspoons baking powder
Wet Ingredients:
- 4 over ripe banana (the browner the peel, the sweeter these muffins will be!)
- 2 tablespoons milk (add more if batter is too thick)
- 2 teaspoons vanilla
- 1 cup natural peanut butter
- 3 eggs
Yummiest part of the recipe:
- 1 cup chocolate chips
Notes:
- *You will need a blender for this recipe!
- *If your bananas aren’t over ripe, I recommend adding 1/3 cup pure maple syrup to sweeten the muffins!
- We love using cupcake/muffin liners for this recipe!
Directions:
- Preheat your oven to 350 degrees.
- Add oat flour to your blender. Blend well, until the oats become a fine flour.
- To your blender, add the remaining dry ingredients. (Cinnamon, salt & baking powder) Blend well!
- Pour your dry ingredients into a bowl & set aside.
- Add all wet ingredients to the blender and blend well.
- Add dry ingredients back into the blender and pulse to combine.
- Remove the blade and add chocolate chips.
- Spoon into cupcake/muffin liners. I add about 1/4 cup to each liner.
- Bake at 350 degrees for 14 minutes.
- Cool for 5 minutes and then devour! My kids love these muffins so much!!!
We love breakfasts that are on the go & delicious! These muffins are a healthy(ish) option for breakfast and it’s a healthier food my kids really enjoy! If you’re looking for a splurge or super sweet muffin, this isn’t it! We love it, but we understand some people love cake-like muffins or sweet muffins! These hit the spot for us, but if you’re looking for a bakery style muffin, you need a different recipe! Haha! Just trying to keep it real! They’re great as a healthier option- and to be truthful, I’m not even sure my kids know they’re healthy! They just know they’re good!!!
