The Best Sugar Cookies!
Christmas is a long time to wait for homemade sugar cookies!
We decided to use leaf & pumpkin cookie cutters and make a new October family tradition! It’s 2020 & anything goes!
If you get excited about sugar cookies, but never make time to refrigerate them- this is your recipe! It’s so delicious & doesn’t require hours in the frige before you roll them out.
Literally so easy: Make – roll – cut – bake – cool- decorate!
Cookie Ingredients:
1 cup softened salted butter (2 sticks)
2 cups granulated sugar
2 eggs
3 teaspoons real vanilla extract
1 cup sour cream (don’t use reduced fat!)
1 teaspoons salt
2 teaspoons baking soda
5 1/2 cups all-purpose flour
Cookie Frosting Ingredients:
2lbs (4 cups) powdered sugar
1 stick salted and softened butter
1/3 cup heavy whipping cream
2tsp real vanilla extract
Pinch of salt
Directions:
1. Preheat your oven to 375 degrees.
2. In a mixing bowl, cream two sticks softened butter and two cups granulated sugar.
3. Add eggs and cream together with a mixer.
4. Add 3 teaspoons real vanilla extract and sour cream to the creamed butter, sugar & egg mixture. Mix to combine.
5. In a separate bowl (I use a large bowl!), combine all dry ingredients: 1 teaspoon salt, 2 teaspoons baking soda & 5 1/2 cups of flour! Stir to combine.
6. Mix together the wet & dry ingredients. I add about 1/3 of the dry ingredients to the wet ingredients at a time. It’ll be sticky when you’re done, but it’ll be PERFECT!
7. Line your table with parchment paper. Dust with flour. Add the cookie dough & dust the dough with flour. Dust your rolling pan with flour too- you don’t want that to stick!
8. Roll your dough out until it is 1/4 of an inch thick. TRUST ME! If you want a thick, soft, amazing, melt in your mouth sugar cookie- roll the dough to be 1/4in thick!
9. Cut out your cookies and lay them on a lined cookie sheet. I love to use parchment paper to line my cookie sheets!
10. Cook at 375 degrees for 7-8 minutes. You do NOT want the edges golden brown. Change everything you believe sugar cookies to be! These cookies are going to be light & fluffy- they’re dreamy! They won’t look done when you pull them out, but trust me- they’re done! They take 7 minutes to cook in my oven.
11. Let the cookies cool completely before you decorate them!
Cookie frosting:
My friend Kelly calls my cookie frosting “ice cream cookie frosting” because she says it tastes like ice cream! She looks forward to coming to our house to make cookies & I love her for it!
Here’s how you make it!
1. In a mixer, combine all ingredients! Mix for a few minutes, or until frosting is light & fluffy!
2. If you’d prefer a more liquid-y frosting, add a little more heavy whipping cream!
3. Add food coloring to make the colors you love!
